Myth
Honey that has crystallized – looks cloudy,
has granules in it, or is liquid on top and
solid on the bottom – has either gone bad
or is not a pure, all-natural product.

Truth
Crystallization is actually a sign that honey
is pure and the rate of crystallization de-
pends on the fl oral source of the honey. This
natural process occurs over time and does
not affect honey’s quality or safety. If the
consistency isn’t ideal, you can safely and
repeatedly re-liquify your honey by placing
the container in hot water. Microwaving is
not recommended.

Myth
Honey is pasteurized to kill bacteria and
make it safer to consume. Pasteurization
also destroys nutrients making unpasteur-
ized or raw honey a more nutritional option.

Truth
Honey cannot develop bacteria. Pasteuri-
zation prevents it from fermenting as all
nectar-derived products contain naturally-
occurring yeast. Fermented honey is safe
to consume, but might have an odd consis-
tency and/or taste. Pasteurized honey also
stays liquid longer but still contains all the
same nutrients as unpasteurized honey.
