Inspired by blue and white
Chinese ceramics, this cake
is created in tribute to the
beautiful gown of Guo Pei
which was featured in The
Metropolitan Museum of Art
exhibition, China: Through the
Looking Glass. The cake fea-
tures multiple layers of gum
paste, each airbrushed using a
stencil to keep the consistency
of the design. They are then
folded and arranged to form
an architectural draping effect.

Step 1.
Roll out a piece of gum paste very thinly (I use a pasta roller with the
thinnest setting) and cut a circle. Put the stencil on top and a layer of
mesh on top of that. Spray with an airbrush using navy blue to get the
Chinese ceramic look.

Step 2.
After airbrushing, the pattern will show on the gum paste. The edge
can be done by putting a smaller circle of baking paper on top and
airbrushing around the edge. Prepare a few circles combining both
big and small. Allow to dry for about an hour or until semi dry but
manageable.

Step 3.
Fold into various shapes as shown. Support with baking paper or a paper
towel and let completely dry. Arrange to match the gown design and
adhere to the cake using edible glue.
