SERVES 1 PREP AND COOK TIME 20 MINUTES

1 x 150gpieceskinlesssalmonfillet
1 sprigofcoriander,rinsedwell
1 longredchilli, de-seeded and
slicedfinely
1 teaspoonfinelygratedginger
1 tablespoonsoysauce
1 tablespoonlimejuice
125gservingsteamed brown rice
andquinoamix
¼medium(50g) red capsicum,
slicedfinely
½medium(65g)Lebanese
cucumber,diced
limewedges,toserve

1 Preheatoven200°C(180°Cfan-forced).
2 Rinsea largepieceofbakingpaper
underwater,drain,andcrumpleto
softenthepaper.Placesalmonfilletinto
thecentreandtransfertoa bakingtray.
3 Finelychopthestemandrootsofthe
corianderandsetleavesasidetouse
later.Putthechoppedcorianderintoa
bowlwiththechilli,ginger,soysauce
andlimejuice.Stirtocombine,andpour
overthesalmonfillet.Encasethesalmon
in thepaper;bakefor 10 minutes or until
cookedtoyourliking.
4 Meanwhile,heatricemixin the
microwaveaccordingtoinstructions.
Transfertoa bowl;addcapsicum,
cucumberandcorianderleaves.Tossto
combineandtransfertoa servingdish.
5 Removesalmonfromoven;placefillet
ontopofricesaladanddrizzlewiththe
cookingjuices.Servewithlimewedges.

2 tablespoonscorianderleaves
70ggreenbeans,trimmed
2 tablespoons natural flaked almonds,
toasted


1 Putthechicken,oliveoilandspice
mixintoa bowl;tosstocoat.
2 In a separatebowl,combinethe
dicedmango,redonion, chilli and
corianderleaves.
3 Bringa smallpanofwatertothe
boilandheata non-stick fryingpan
overa highheat.
4 Cookthechickenpiecesfora
minuteortwooneachside.Transfer
toa warmplate.Blanchthegreen
beans,drainandtransfertothe
plate.Spoonoverthesalsaand
sprinklewiththealmonds.
