180gbabyrocketleaves
½cup(100g)softmarinated goat’s cheese
PESTODRESSING
½cup(130g)pesto
¼cupmarinatingoilfrom goat’s cheese

1 Combinelamb,garlic andoilin
a mediumbowl.
2 Usinga vegetablepeeleror
mandoline,thinlyslicecucumbers
lengthwaysintoribbons.
3 Meanwhile, cook lamb on a heated


oiledgrillplate(orgrillorbarbecue)about
5 minuteseachsideoruntilcookedas
desired.Cover;stand5 minutes.Slicelamb.
4 PESTODRESSINGPlaceingredients
in a smallscrew-top jar; shake well
tocombine.
5 Combinecucumber,tomatoes,rocket
andlambin a largebowl.Seasontotaste.
6 Servesaladtoppedwithcrumbled
cheese;drizzlewiththepestodressing.

toasted and chopped coarsely

1 medium(250g)avocado,slicedthinly
1 tablespoonpepitas,toasted,extra
AVOCADOYOGHURTDRESSING
1 medium(250g) avocado, chopped
coarsely
¾cup(200g)Greek-styleyoghurt
¼cupfreshbasilleaves
2 tablespoonslimejuice
1 smallclovegarlic,choppedfinely
1 tablespoonextra-virgin olive oil
1 tablespoon water

1 AVOCADOYOGHURTDRESSING
Blendorprocessingredientsuntil
smoothand combined; season
totaste.
2 Boil,steamormicrowavesnow
peas,beansandbroccolini,separately,
untiltender;drain.Placesnowpeas,
beansandbroccoliniin a largebowl
withoil;tossto combine. Coverto
keepwarm.
3 Cookricefollowinginstructionson
packet.Combinericeandchopped
pepitasin a medium bowl; season
totaste.
4 Servericetoppedwiththree-quarters
ofthedressing,thenvegetables,
avocado,remaining dressing and
extrapepitas.
Not suitable to freeze or microwave.
