MAKES 1. 25 LITRES
PREPTIME 10 MINUTES

Cut1 pinkgrapefruitand
1 orangeintoslices.Place
halfthegrapefruitslicesin a jug
with1 tablespoonrosemary
leavesand1 tablespoonbrown
sugar.Usingtheendofa rolling
pin,bashdownonthefruitto
releasejuicesanddissolvethe
sugar.Strainmixtureintoa
servingjughalf-filledwithice.
Add 1 ¼cupschilledAperol,and
½cupeachfreshlysqueezed
chilledorangeandlimejuice.Add
slicedfruit;stirtocombine.Slowly
pourin a 750mlchilledbottleof
prosecco;stir.Servewithextra
long rosemary sprigs, if you like.

(+ REFRIGERATION TIME)

Place¼cupsaltflakesona plate;
grateover1 teaspoonlimerind.
Place1 eggwhitein a shallow
bowl;whiskwitha forktoloosen.
Diptherimsofsixglassesinto
eggwhite,thenintosaltmixture.
Chillglasses.Usinga whisk,
combineandthenpressdown
on1 cuptequila,¾cuplime
juice,½cupmaplesyrup,½cup
blackberriesand1 thinlysliced
jalapeñochilliin a jug;refrigerate
for 10 minutes.Strainmixture
intoa blender.Add2 cupsof
icecubes;blenduntilcrushed.
Filla largejugwithanother
2 cupscrushedicecubes;pour
overtequilamixture.Servein
preparedglasses,toppedwith
blackberries and chillies.

MAKES 1 .5 LITRES
PREPTIME 10 MINUTES(+ FREEZING TIME)

Slowlypour1 cup(250ml)bitterlemon
sodaintoanice-cubetray;freezefor
4 hours.Peela ripe1.6kgpineapple,
coreandcoarselychop;youwill
need750gpineapple.Placein a large
resealablebagandplace,flat-side
down,in thefreezer;freezefor4 hours
orovernight.Blend750mlchilledpinot
grigio,thefrozenpineappleandthe
bitter-lemonicecubesintoa slushie
consistency.Pourintoa jugandserve
immediately with twists of lemon.
