QUESTION
The Dutch love
hagelslag —
chocolate sprinkles on toast. Do they
eat any other foods in an unusual way?
Hollandse nieuwe, new season
herring, or haring in Dutch, appear at the
beginning of June and are the cause for
much celebration in the Netherlands,
where the arrival of this treat is front-
page news.
Herring is prepared in the traditional
way: gutted on board fishing boats, leaving
the pancreas in place. Pancreatic enzymes
help preserve the fish, so the brine they are
stored in needs less salt. This gives Dutch
herring its unique flavour.
They should be eaten the Dutch way:
grab the raw herring by its tail, dip in raw
onions, throw your head back and swallow
whole. If this doesn’t appeal, herring can
be eaten in a bun with or without finely
chopped onion and/or sliced gherkins, a
so-called broodje haring.
Chips are standard fare around the
globe, but in the Netherlands there is a
great deal of regional pride associated
with how you eat your friet, frites, patat
or Vlaamse friet (French fries).
Variations include friet met satesaus:
fries with peanut sauce; friet speciaal:
with mayonnaise, (curry) ketchup and
onions; patatje joppie: with a mixture of
mayonnaise, ketchup and spices; and
patatje oorlog: with peanut sauce,
mayonnaise and raw, chopped onions.
The Dutch often have fries with a
sausage or frikandel, which is long, skin-
less and deep fried.
Another Dutch favourite is filet
americain — steak tartare, or seasoned
raw beef. Like hagelslag, it’s something
you wouldn’t usually associate with being
spread on toast. Not for everyone.
stamppot is lumpy, mashed potato and
a mixture of vegetables including sauer-
kraut (fermented cabbage), spinach,
swede, carrot, onion and kale. There is
usually a giant rookworst (smoked
sausage) perched on top. The right way
to eat it is to make a small hole in the
mash and fill it with gravy, known as a
kuiltje jus (little gravy pit).

QUESTION
Have there ever
been husband
and wife astronauts?
NASA astronauts Mark Lee and Jan
Davis got married during training and
were launched into space together on the
space shuttle Endeavour in 1992.
This provoked a great deal of media
speculation about the possibility of the
couple having sex in space.
Their mission, STS-47, was the 50th
flight of the space shuttle and also
included Mae Jemison, the first African-
American woman to orbit the Earth. Lee
and Davis separated in 1999.
There have been other astronaut
married couples: Shannon Walker and
Andrew Thomas; Megan McArthur and
Robert Behnken; Robert ‘Hoot’ Gibson
and Rhea Seddon; Steve Nagel and Linda
Godwin; and Peter ‘Jeff ’ Wisoff and
Tammy Jernigan.

QUESTION
If England had
operated the
Salic Rule, where the throne can be
inherited only by a male, instead of
Mary I and Elizabeth I, who would
have reigned after Edward VI?
THIS would have been Henry Stuart,
Lord Darnley, the future husband of Mary
Queen of Scots, as there were no other
eligible male heirs. Darnley and Mary
Stuart were grandchildren of Margaret
Tudor, widow of James IV of Scotland,
mother of James V and the elder sister of
Henry VIII.
Darnley was the son of Matthew
Stewart, 4th Earl of Lennox, and his wife,
Lady Margaret Douglas, Margaret
Tudor’s daughter by her second marriage
to Archibald Douglas. Mary Stuart was
the daughter of James V, who died in 1542
when she was six days old.
Briefly, Mary was Queen of France. Her
husband, Francis, the Dauphin of France,
succeeded his father, Henri II, in 1559,
but died a year later, aged 16.
Mary married Darnley in 1565 and their
son, the future James VI, was born in
June 1566. Darnley died in mysterious
circumstances a year later.
Henry VIII had stated in his will that,
after the deaths of his daughters,
presumably without heirs, the line of
succession would pass to a descendant
of his younger sister, Mary.
The Third Act of Succession effectively
barred any descendants of Margaret
Tudor from acceding to the throne. Henry’s
wishes were ignored by Elizabeth I when
she named Margaret’s grandson, James
VI, as her successor. He became James I
of England in 1603.

LoRD Darnley was one of the most
notorious figures in Scottish history. The
grandson of Henry VIII’s sister Margaret,
he was 6ft 2in and extremely good
looking. He captivated Mary Queen of
Scots as soon as she set eyes upon him.
However, his personality failed to live
up to his looks. He was insufferably
spoilt, arrogant, idle and, when thwarted,
could be petulant and uncouth, with a
violent temper.
He was selfish and vain, spending
substantial sums on food and clothing.
He was often drunk and promiscuous,
being openly homosexual, resulting in
him contracting syphilis. He was
described as ‘mentally and morally weak,
and his imbecility was conjoined with
reckless courage... and fatal obstinacy’.
The marriage was a disaster. Darnley
was killed on February 9, 1567, when his
lodgings were destroyed by fire. Mary
married the Earl of Bothwell — thought
to have facilitated the ‘accident’.

Going Dutch: How to eat herring
2 tbsp butter
4 Granny Smith’s
apples, peeled,
cored and diced
1 tsp ground
cinnamon
2 tbsp light brown
sugar
8 scoops vanilla
ice cream
2 ginger nuts
biscuits, crushed
1 In a small saucepan, melt butter over a
gentle heat and add apples, cinnamon and
sugar. Cook for ten minutes or until apples
have softened, but still hold their shape.
2 Split mixture between four sundae glasses
or bowls. Put two scoops of ice cream on top
of each, followed by crushed biscuits. Serve
while apple mix is still warm.
