pepper
2,5ml(½t)paprika
2,5ml(½t)cayenne
pepper
5ml(1t)driedmixedherbs
250ml(1c)flour
TOSERVE
freshparsley,chopped
lemonwedges
1 BatterMixthe flour,
bakingpowder and salt.
Ina separatebowl,
whisktheamasi and
eggstogether, then add
totheflourmixture.
Whiskuntilsmooth.
Addthesodawater and
mixwell.Leave to rest
foratleast30 minutes.
2 ChipsHeatoil for deep-
fryingina pot or sauce-
pan.Cutthepotatoes
intochips.Deep-fry in
batchesuntilgolden
brownandcrispy. Drain
onpapertowels and
seasonwithsea salt.
3 FishSeasonthe fish all
overwithsaltand fresh-
lygroundpepper. Sprin-
klethepaprika, cayenne
pepperandherbs all
overthefillets, then roll
eachintheflour to coat,
shakingoffexcess flour.
4 Reheatthechip oil. One
byone,dipthe fish fil-
letsinthebatter and
addtotheoil.Fry until
goldenbrownand done
- turndownthe heat if
thebattergets crispy
beforethefish is done.
Drainonpaper towels.
5 ToserveSprinkle the
parsleyoverthe fish
