500ml(2c)amasi
4 garliccloves,bruised
2 onions,cutintoquarters
juiceandgratedzest
of1 lemon
30ml(2T)chickenspicemix
4 rosemarysprigs
30ml(2T)oliveoil
lemonslicesorwedges

Greaseanovenproofdish
withnonstickspray.
1 Putthechicken,amasi,
garlicandonionsina

marinatingdish.Mix
wellandleavetomari-
nateovernight.
2 Preheattheovento
180°C.Removethe
chicken,onionandgarlic
fromthemarinadeand
arrangeintheoven-
proofdish.
3 Season the chicken
with the lemon juice,
zest and spice mix. Tuck
the rosemary between
the chicken pieces and
drizzle the oil over.
4 Bake for 45-60 min-
utes or until golden
brown and done. Serve
with lemon slices or
wedges. S

LEMON AND ROSEMARY

tea
1 cinnamonstick
30ml(2T)honey
squeezeoflemonjuice

375ml(1½c)mealie
meal
2,5ml(½t)salt


30ml(2T)butter
60ml(¼c)amasi
TOSERVE
125ml(½c)amasi
30ml(2T)darkbrown
sugar

1 StewedfruitPutthe
driedfruitina glass
bowlandcoverwith
therooibostea.Leave
overnighttosoakand
rehydrate.

a saucepan or pot and

pap into individual
bowls and put the
stewed fruit on top.
Pour a little amasi over
each and sprinkle brown
sugar on top. Serve hot.

The chicken is also delicious braaied over the
coals. You can use the recipe with a whole
butterflied chicken instead of pieces if you like.
