250ml(1c)flour
TOSERVE
freshparsley,chopped
lemonwedges

1 BatterMixtheflour,
bakingpowderandsalt.
Ina separatebowl,whisk
theamasiandeggs
together,thenaddto
theflourmixture.Whisk
untilsmooth.Addthe
sodawaterandmixwell.
Leavetorestforatleast
30 minutes.
2 ChipsHeatoilfordeep-
fryingina potorsauce-
pan.Cutthepotatoes
intochips.Deep-fryin
batchesuntilgolden
brownandcrispy.Drain
onpapertowelsand
seasonwithsalt.
3 FishSeasonthefish
alloverwithsaltand
freshlygroundpepper.
Sprinklethepaprika,
cayennepepperand
herbsalloverthefillets,
thenrolleachintheflour
tocoat,shakingoffthe
excess.
4 Reheatthechipoil.One
byone,dipthefishfillets
inthebatterandplacein
theoil.Fryuntilgolden
brownanddone– turn
downtheheatifthe
