Toast2 Tbspeachpumpkinseedsand
sunflowerseedsina dryfryingpanuntil
lightlybrowned,stirringfrequently.
Placeseedsina mediumbowlwith
2 medium(850g)coarselygrated
beetroot,200gcrunchymixedsprouts, 2
Tbsptornmintleavesand2 Tbspeach
lemonjuiceandextravirginoliveoil;
toss gently to combine. Season to taste.

SERVES 4

Preheatovento180°C.Combine2 Tbsp
lightbrownsugar,1 Tbsptamari,1 tsp
groundcuminand½tspeachcinnamon
andchilliflakesina largebowl.Add 1 cup
eachpumpkinseedsandsunflowerseeds,
and1 Tbspeachlinseedsandwhitechia
seeds;mixwell.Spreadseedmixtureon
a bakingpaper-linedoventray.Bakefor
20 minutes,turningandseparatingseeds
regularly,untilgoldenandroasted.Cool
andstoreinanairtightjar; the mix will
keep for up to 3 weeks.
