THEREAREAfewthingstoknowaboutmakingcheesecake:alwayssetasidemore
timethanyouthinkyouneed.Youhavetoallowthecheesecaketocompletelycool,
topreventcracking.I’vechosennottolinemycakepanswithbakingpaper,asit can
createunattractivelinesandcrinklesaroundthesideofthecheesecake.If the
cheesecakeis completelycoldandset,youshouldbeabletoreleaseit fromthe
springformpaneffortlessly,andyou’llhavea nicecleanedge.I flipthebaseofmy
cakepansupside-down(itwillstillclickintoplace)asthis makes it much easier to
remove the cake from the base when it’s cooked.
