1.Preheat oven to 160°C.
Greasea 20cmx 30cm
rectangularslicepan. Line
baseandlongsideswith
bakingpaper,extending
paper5cmoverthesides.
2.Processbiscuitsuntilfine.
Addbutterandprocessuntil
combined.Pressmixture
evenlyoverbaseofpan.
Bakefor 10 minutes oruntil
golden.Coolcompletely.
Reduceovento140°C.
3.Beat eggs and sugar in a
smallbowlwithanelectric
mixeruntilthickandcreamy.
4.Placechocolateina small
heatproofbowlovera small
saucepanofsimmering
water(makesurethebase
ofthebowldoesn’ttouch
thewater). Stiruntilsmooth.
5.Beatcreamcheesein
a mediumbowlwithan
electricmixeruntilsmooth.
Graduallybeatintheegg
mixture, then the melted
chocolateandhoney.
6.Tossfrozenberriesin
cornflour,discardingexcess
cornflour.Placeberriesevenly
oncoldbaseinpan.Pour
creamcheesemixtureover
berriesandsmoothsurface.
7.Bakecheesecakefor
40 minutes oruntiljust
setandthecentrehasa
slightwobble.Refrigerate
for3 hoursorovernight
before cutting.
