GOAT’S CHEESE-AND-
FIG TART WITH
CARAMELISED ONION

olive oil 1 T
onions 2, thinly sliced
butter 1 T
brown sugar 2 T
balsamic vinegar 1 T
readymade puff pastry 400 g
goat’s cheese 200 g, crumbled
fresh figs 6, sliced


1 Heat the oil in a heavy-based pan and
sauté the onions over a low to medium
heat. Cook gently for 10 minutes, or until
soft and translucent. 2 Add the butter,
sugar and balsamic vinegar. Continue
cooking over a low heat, stirring frequently,
for 20–30 minutes until onions are very
soft, caramelised and jam-like. Set aside to
cool. 3 Preheat the oven to 180 ̊C. Roll
out the pastry according to package
instructions, trim and shape into in a 20-cm
circle. Spread the onion mixture onto the
pastry base. Top with most of the goat’s
cheese, figs and remaining cheese. Crimp
the edges in about 8 places and place
on a baking tray. Bake for 20–25 minutes,
or until golden and crisp.

JAM TART
“There is no way I was going to have a
cookbook without a recipe from Mama D
herself. When we were growing up, my mom
was always creative in the kitchen, always
up to something on the stove, making
special meals out of nothing. Oh, but she
loved baking. I remember coming home to


be welcomed by the most beautiful aroma
of something or the other in the oven. And
everything always seemed so simple. Please
try my mom’s coconut jam tart. I know you
will be a fan too.”

Serves 6 to 9

GREAT VALUE
Preparation: 10 minutes, plus
30 minutes’ chilling time
Cooking: 25 minutes

flour 480 g
baking powder 3 t
sugar 100 g
salt a pinch
desiccated coconut 2 t
butter 220 g
free-range eggs 3
jam (preferably apricot) ½ cup
coconut shavings 40 g

1 Mix the dry ingredients except the
coconut shavings. 2 Add the butter and
eggs to the dry ingredients one by one.
3 Mix until a dough forms. 4 Press two-

thirds of the dough into a baking pan using
your fingers. 5 Wrap the remaining dough
in clingwrap and place in the freezer for
30 minutes. 6 Preheat the oven to 180°C.
Spread the jam onto the dough and grate
the remaining frozen dough on top of the
jam. 7 Bake for 15 minutes. 8 Remove from
the oven, scatter over the coconut shavings
and bake for a further 5–10 minutes, or
until golden brown. Allow to cool slightly
before serving.
