milk2½cups
cream2½cups
vanillapods2,split(or 2–3 t vanilla paste)
castersugar 300 g
largefree-rangeeggs 6
butter 80 g,melted
softrollsorslicesofwhitebread
(preferablya dayold) 8
sultanasa large handful, soaked overnight

inwhiskyorbrandy
apricotjamormarmalade 150 g
cream or ice cream,for serving

1 Preheattheovento200°C.Placethe
milk,creamandvanillapodsina saucepan
andbringtotheboil. 2 Beatthecaster
sugarandeggsuntilcreamy.Veryslowly
addthehotvanilla-creammixturetothe
eggsandsugar,beatingcontinually,until
incorporated. 3 Greasea deepovenproof
dishwithsomeofthebutter.Brushthe
rollsorbreadwiththeremainingbutter.
Layerthebutteredrolls/breadinthedish,
sprinklingeachlayerwithsultanas. 4 Pour
overthecustard,ensuringallthebreadis
submerged.Allowtosoakforatleastan
hourbeforebaking.Thepuddingwillpuff
upa bitwhilebaking,sotakecarenotto
overfillthedishandleavea smallspace
atthetop. 5 Placethedishina largerpan
andfillhalfwaywithboilingwater.Bake
onthemiddlerackoftheovenfor30–40
minutes, or until dark brown and crispy on

oliveoilandchoppedrosemary.Marinate
overnightinthefridge.Allowtocometo
roomtemperaturebeforebraaiing. 2 Braai
oververyhotcoalsfor25–30minutes,or
untilmediumrare.Avoidhandlingthe
meattoomuch,butdocheckit oftenfor
“give”untilcookedtoyourpreference.
3 Removefromthebraai,coverintinfoil
andallowtorestforatleast 10 minutesor
longerbeforecarving.Youshouldhavea
nicelybrownedandcaramelisedfilletwith
a rangefromraretomediumthroughthe
lengthofthefillet.Thefilletwillcontinue
cookingwhileresting,soremoveit from
thefireearliertopreventovercooking.
Youcanalwaysreturnit tothefiretocook
fur ther. 4 Sliceinto2 cm-widepiecesand
servewithbrownedbutterandsalsaverde.
