an 18 x 18cmcmovenproofdish,or
8 smaller dishes, with oil and set aside.

2 Pourabout4 t oliveorvegetableoil
intoa largesaucepanovera medium
heat. 3 Addtheonions,garlicand
bobotiespicemix,andcookuntilthe
onionsaretranslucent.(Ifthemixture
beginstosticktothebottomofthepot,
addmoreoil.Thespicestendtosoak
upa lotofoil.) 4 Addthemincedbeef
or lamb and cook until lightly sealed.

Seasonwithsaltandpepper,then
coverthepotwitha lidandsimmer
overa verylowheatforabout 30
minutes,oruntilthemeatis tender.
Removefromtheheat. 5 Meanwhile,
ina separatebowl,mixthemilk,eggs,
breadcrumbs,apricots,lemonjuiceand
zest,appleandsultanas.Addthis
mixturetotheminceandstirwell.
6 Transferthemixtureintotheprepared
dish/dishes.Usingthebackofa spoon,
levelthetop.Coverwithfoil,thenbake
for 30 minutes. 7 Removethebaking
dish/dishesfromtheoven,then
increasetheoven’stemperatureto
200°C. 8 Tomakethecustard,mixthe
milk,cream,salt,pepperandturmeric.
Removethefoilfromthebakingdish/
dishes,thenpourthecustardmixture
overthemince. 9 Garnishwiththe
flakedalmondsandbayleaves.When
theoventemperaturereaches200°C,
bakeuncoveredforabout 15 minutes
until lightly browned.
