BRAAIED MACKEREL
WITH HORSERADISH
AND BEETROOT


“If you don’t want to braai whole mackerel,
use Woolies’ skin-on mackerel fillets instead.
Prepare them in the same way as below, but
braai them for 1–2 minutes on the skin side,
then quickly on the flesh side for 10 seconds.”

baby beetroot 16, cleaned
balsamic vinegar 2 T
garlic 4 cloves
fresh thyme 5 g
sea salt and freshly ground black
pepper, to taste


Woolworthshorseradish1–2T
crèmefraîche½tub
lemon,forserving
Woolworthsfreshwholemackerel
4,cleaned
oliveoil4 T
freshdill,torn,forserving
watercress,forserving


1 Make2 separatetinfoilparcelsandfill
eachparcelwiththebeetroot,some
halvedandothersleftwhole.Drizzle
withthebalsamic,addthegarlicand
thyme,thenseason.Sealtheparcels.
2 Placeovermediumcoalsfor 40 minutes,
oruntiltenderandcaramelised.Foldthe
horseradishintothecrèmefraîche,season
andadda squeezeoflemonjuice.Set
asideforserving. 3 Brushthemackerel
witholiveoilandgrillskinsidedownover
hotcoalsorona gasbraaifor1–2minutes
untilslightlycrispyandbrowned.Turn
overtocooktheotherside. 4 Remove
fromtheheatanddrizzlewitholiveoil,
tearoverthedillandseason.Servewith
thebeetroot,horseradishcrèmefraîche
andwatercress.

lemongrass 1 stalk, halved and bruised
