STIR-FRIEDGREENS,

Woolworthsfirm tofu1 x 297 g carton
peanutoil1 T
soyasauce1 T
cornflour1 T


peanutoil2 T
garlic1 clove,chopped
freshginger1 x 2.5 cm piece, peeled
andchopped
springonions3–4,finelychopped
Asiangreens400–500g whole,split,
choppedorshredded(anymixofpak
choy,Tenderstembroccoli, mangetout,
Chinesecabbage)
soyasauce1 T,plusextraforserving
sesameoil2 T,plusextraforserving
sesameseeds2 T,toasted
seasaltandwhitepepper,totaste
steamedriceor Chinese noodles,
for serving


1 Drainthetofuandcutintocubes.Place
onkitchenpaperandcoverwithanother
sheetofpaper.Coverwitha chopping
board,thenplacesomethingheavyon
toptoweighit down.Leavefor20–30
minutestogetridofexcessmoisture.
2 Moistenthecubedtofuwiththeoiland
soyasauce.Addthecornflourandgently
mixtocoatevenly. 3 Spreadoutona
bakingtraylinedwithbakingpaper.Bake
at200°Cfor 30 minutes,turninghalfway,
untilgoldenandcrisp. 4 Heata wokorpan
untilmediumhot,thenaddthepeanut
oil.Stirinthegarlicandginger,thenadd
thespringonionsandgreens.Leavefor
a minuteortwo,thenstir-fryovera high
heatuntilwiltedandtender-crisp. 5 Add
thesoyasauceandsesameoilandcheck
theseasoning.Addmoresoyaora little
saltif necessary,anda littlewhitepepper.
Sprinklewiththesesameseedsandtop
withthetofu.Serveonriceornoodles.

FortheTurkishricepilau:
basmatirice185 g
salta pinch
oliveoil1 T
butter1 T
orzoorricevermicelli3 T
chicken,vegetablestockor water2 cups
lemonjuicea squeeze
saltandfreshly ground black pepper,
to taste

1 Preheattheovento200°C.Line2 small
bakingtrayswithbakingpaper. 2 Arrange
theasparagusononetrayina singlelayer.
Moistenwith2–3T oliveoilandseason.
3 Cutthehalloumiinhalfandplaceon
anothertray.Moistenwith2 T oil.Roastfor
10 minutes,oruntiltheasparagusis tender
andthecheesesoftenedandstartingto
bronze. 4 TomaketheTurkishricepilau,
soakthericeinhotwaterwitha good
pinchsaltforabout 10 minutes.Heatthe
oilandbutterina saucepan.Stirintheorzo
orvermicelliandkeepstirringuntilwell
browned. 5 Stirinthedrainedrice,then
pourinthestock.Bringtoa simmer,
coverandreducetheheat.Simmervery
gentlyfor 15 minutesoruntiltheliquid
is absorbed.Removefromtheheat.
6 Uncoverandplacea cleanteatowelor
papertowelsontherice.Coverandleave
tostandfor5–15minutes.Fluffupwith
a fork. 7 Servetheasparagusandthickly
slicedcheeseontheTurkishrice pilau.
Passaroundlemonwedges.

well-drained

freshly ground black pepperto taste

1 Ina widepan,stir-frythebabymarrow
spaghettiintheoiluntiljustsoftened.
Turnofftheheatandstirintherocketand
spinachuntilslightlywilted. 2 Addthe
drainedpastaandmix.Generouslytop
eachservingwithpesto and a twistor
twoofpepper.
