✦125gbutter,chopped
✦¼cupicingsugar,plus
1 tbspextratodust
✦1¼cupsplainflour
✦ 3 eggs
✦ 1 cup caster sugar
✦ 2 tsp finely grated
lemon rind
✦ ½ cup lemon juice

1 Preheat oven to 180°C.
Grease a shallow 20cm
square cake pan, line base
and sides with baking
paper, extending paper
2cm over the sides.
2 Beat butter and icing
sugar in a small bowl with
an electric mixer until

smooth.Stirin1 cupof
theflouruntilcombined.
Pressmixtureevenlyover
baseofpan.Bake 15 mins.
Remove from oven using
a spatula, level the base in
pan. Return to oven, bake
a further 10 mins or until
browned lightly.
3 Meanwhile, place eggs,
caster sugar, remaining
flour, the rind and juice
in a medium bowl, whisk
until combined. Pour lemon
filling over hot base.
4 Bake slice 20 mins or
until firm. Cool in pan. Just
before serving, dust with
extra sifted icing sugar.

themeltedbutter.Pressmixture
firmlyoverbaseofpan.Bake
15 minsoruntillightgolden.
Removefromoven,cool.
3 Placecondensedmilk,syrup
andextrabutterina medium
saucepan,stiroverlowheat
untilsmooth.Pourmixtureover
cooledbase.Bake 20 minsor
untilgoldenbrown.Cool.
4 Placechocolateandoilin
a mediumheatproofbowl
overa mediumsaucepanof
simmeringwater(makesurethe
baseofthebowldoesn’ttouch
thewater),stiruntilsmooth.
Spreadchocolatemixture
overcooledslice.Refrigerate
30 minsoruntilchocolateis
setbeforecuttinginto 24 pieces
witha hotknife.
