smoked salmon • 1 cup


shelled edamame • 1 cup


matchstick-size pieces


of cucumbers • 1∕2 cup


matchstick-size pieces


of carrots • 1∕2 cup


crumbled toasted nori

first 5 ingredients


for dressing. In bowl,


toss rice with 1∕4 cup


dressing; divide among


4 bowls. Top with


remaining ingredients


and dressing. Serves 4.
