BASTINGSAUCE


  • 30ml apricot jam

  • 60ml chutney

  • about 30ml red wine
    vinegar

  • 15–30ml Sriracha (or
    yourfavourite hot sauce)

  • 15ml Worcestershire
    Sauce


STICKYCHICKEN
Thesecretto braaiingsmoky,succulentchickenis addingthe
bastingsauceforonlythelastquarterof thecookingtime.

1 Lightthebriquettesin yourkettlebraai; you will need
medium-highheatto cookthechicken.
2 Usinga sharpknife,cutthreedeep incisions in the
skinof eachpieceof chicken.This will help the heat
(andflavouring)to penetratethemeat and ensure
evencooking.Mixtogethertheingredients for the
spicerubin a pestleandmortaruntil well combined
andrubgenerouslyoverthechicken pieces.
3 Makesurethecookinggratein your kettle braai is
cleanandreadyto use.Braaithe chicken over direct
heatfora coupleof minutesoneach side to get the
cookingprocessgoing.Whenthe chicken starts to
colour,movethepiecesto theside of the braai grid so
theycookoverindirectheat.Close the lid and allow the
chickento cookgentlyforabout30 minutes. Check the
chickenat leastonceduringthistime.
4 Mixthebastingsauceingredientstogether. Open the
kettlebraaiandbrushtheskinsideof the chicken pieces
generouslywiththebastingsauce.Cover the kettle braai
withthelidandallowthemeatto cookfor another
10–15minutesor untilgolden-brownand sticky, turning
once.Bevigilant;youdon’twantthechicken to burn!
Servewithyourfavouritesidedishes;we chose warm
potatosalad,hummus,olivesandherb salad.
