1 Mixthelambchopswiththeoliveoil,corianderandlemon
andsetasidefora fewminuteswhileyoudoctorthesauce.
2 Chopthemintfinely.Alongwiththevinegarandchilli,mixthe
mintintothepestothendecideif it needsanextradashof oilor
evenwatersothatthetextureis morelikea saucethana paste.
3 Frythechopsovermoderatecoalsforabout5–8minuteson
eachsideuntiljustpinkandjuicy.Seasonto tastewithsaltand
blackpepper.Youcanalsousea thick-basedpanto frythe
chopsuntilgolden-brown.Drizzlewiththesauceandservewith
potatosalad.

1 Mixallthemarinadeingredientstogetherandruballoverthe
meat.Marinateat roomtemperatureforat least 30 minutes
(overnightis best).
2 Preheattheoven.Wipeoffanyexcessmarinadefromthemeat.
Heatthebutterandoilovermoderateheatin anovenproofpan.
Frythemeatuntilbrownedononeside(about5–7minutes).
Turnoverandfryfor5–7minutesontheotherside.Seasonto
tastewithsaltandpepper,thenplacethepanin theovenfor
about5 minutesfora juicy,pinkchop.Restforabout5 minutes
andservewithanextradollopof yoghurtandfreshlemonjuice.
