2 Whisktogethertheeggsandcreamin a jug.Seasonandadd
50g(^1 ⁄ 3 cup)parmesan.Oncepanis hot,addtheoilandswirlto
coat.Pourtheeggmixtureintopanand cook for 3 minutes or until
it startstosetaroundtheedges.
3 Whiletheeggmixturecooks,cutthethickerbroccolinistalks
in half.Placethebroccoliniin a largeheatproofbowlandcoverwith
boilingwater.Setasidefor1 minuteoruntilbrightgreen.Drain.
4 Arrangethebroccoliniandsalamiontopoftheeggmixture.
Sprinklewiththeremainingparmesan.Placethepanunderthe
grillfor5 minutesoruntilsetandgolden.Seasonandserve.
