makes 12 cups (1 cup per serve)|prep |cooking 35 mins

270g(3cups)rolledoats
130g(2cups)shreddedcoconut
145g(1 cup)macadamias,
coarsely chopped

35g(^1 ⁄ 3
80gsolidcoconut oil
125ml(^1 ⁄ 2
100g(^1 ⁄ 2 cup,firmly packed)
brownsugar
2 tspvanillabeanpaste
170gpktdriedcranberries
2 x 200gpktdarkchocolate baking chips
1 tspseasaltflakes
Raspberrycoulis(seetip) and Greek-style yoghurt,
to serve (optional)

1 Preheatovento180°C/160°Cfanforced.
Line2 bakingtrayswithnon-stickbakingpaper.
2 Placerolledoats,coconut,macadamia,almonds
andcocoain a largebowl.Stiruntilwellcombined.
3 Combinetheoil,maplesyrup,sugarandvanilla
in a small saucepan. Cook, stirring occasionally,

overa lowheatuntilmeltedandcombined.
Addtotheoatmixtureandstiruntilwellcoated.
4 Divide mixture among prepared trays, spreading

Whilegranolais stillhot,addthecranberriesto
traysandtossuntilwellcombined.Sprinklewithhalf
thechocolatechips.Setaside,withoutstirring,for
15 minutestomeltchocolatethroughgranola.Place
thetraysin thefridgefor 30 minutesoruntilthe
chocolateis setandgranolahascooledcompletely.
6 Addthesaltandremainingchocolatechips.
Stiruntilcombined.Breakupanylargeclusters.
Servewithraspberrycoulisandyoghurt,if using.
