Throughout a long career in restaurants in both
Japan and the United States, Graves developed
a deep understanding of Japanese language,
cultures and cuisines. He also developed a serious
passion for saké and shochu. In 2014, he became
the only American to reach the fi nals of the Sake
Service Institute’s World Sake Sommelier Compe-
tition in Japan. At Skurnik since 2017, he strives to
convey the untold stories of craft manship behind
saké and shochu to American consumers.
