BUTTERNUTSLICESWITH

Ingredients
(enoughfor8)
3 tablespoonssesameseeds
1 tablespoonseasaltflakes
1 medium-sizedbutternut,
unpeeledandcutinto
1 cmslices
2 tablespoonsoliveoil
1 tablespoonsesameoil
½cupbuttermilk
1-2tablespoonssrirachasauce
1 tablespoonfreshlimeor
lemonjuice

(^) 3 tablespoons pomegranate
seeds
1 Roast the sesame seeds and
salt in a dry pan until light brown.
Allow to cool and store in an
airtight container – as easy as
that. If you prefer a finer texture,
you can fine-tune it before
storing it.
2 Boil the butternut in water
until just soft. Drain and allow to
cool so you can handle it. Mix the
two oils and baste the mixture
onto the butternut. Then pack it
in a single layer on a hinged grid.
Braai the slices until they have a
good colour with nicely scorched
grid lines.
3 Mix together the buttermilk
and sriracha sauce.
4 Sprinkle with the sesame
seed, followed by the lime
juice, pomegranate seeds and
buttermilk sauce. You can also
serve the sauce separately so
everyone can help themselves.

Ingredients

1 tablespoondriedonion
flakes
1 tablespoonbrownsugar
1 tablespoondriedthyme
2 teaspoonsseasaltflakes
1 teaspoonfineallspice
1 teaspooncoarseground
blackpepper
a pinchofnutmeg
a pinchoffinecinnamon
a pinchofginger
a pinchofcayennepepper
(^) 24 chicken drumsticks
Here’s how
1 Combine all the spices in a
food processor or spice grinder,
mix thoroughly and store in an
airtight container.
2 Score each drumstick three
times – this helps absorb the
flavours and also shortens the
braai time. Place the chicken and
the spice mixture into a Ziploc
bag and marinate for at least an
hour, but preferably overnight.
3 Braai the chicken until cooked
and juicy. Remember, there is
sugar in the marinade – if the
coals are too hot, the chicken will
get scorched before it is cooked.
So take your time. Serve the
chicken breasts with fresh lemon
wedges and buttered mielies.
