FISH DISH

SMOKED FISH PÂTÉ WITH BRUSCHETTA

Fishy spread

Even when you camp in the Bushveld,

you can make this delicious snack - just

in time for sunset.

You need

(enoughfor4)

1 tin(215g)sardines

½cupcreamcheese

zestandjuiceof½lemon

saltandpeppertotaste

2 tablespoons fresh parsley, finely

chopped

2 tablespoonsonion, finely chopped

8 slicesciabatta

olive oil for frying

Here’s how

1 Carefully remove the bones from the

fish and then mix the meat with the rest

of the ingredients (except the bread

and oil).

2 Baste each slice of bread well with

olive oil and fry in a hot pan on both

sides until golden brown. Serve the pâté

with the bruschetta.
