Dill has a few additional
benefits, each one another
reason why you should grow
it in your garden.
Chew on a piece of dill to
eliminate bad breath. It’s also
excellent to help eliminate
flatulence and aerophagy
(swallowing air). Make a tea
and give a few teaspoons
to infants for colic. Dill also
helps to increase breast
milk production in nursing
mothers.

These three herb sauces can be lightly spooned over the fish, or
served on the side or as a thin base on which to rest the fish.

5-minute basil, lemon balm and
lemon sauce
Whisk together 3 tablespoons of lemon juice,
2 tablespoons of good-quality olive oil, 4 crushed garlic cloves
and finely chopped fresh basil leaves (packed into an 1⁄8 of a cup).
For a variation, reduce the lemon juice to 2 tablespoons and
add finely chopped lemon balm leaves or use lemon balm as a
garnish. Make the sauce in advance so that the flavours can fuse.
Pour over grilled fish just before serving.

Dill and basil mayonnaise
In a bowl, combine 2 tablespoons of mayonnaise, a clove
of chopped garlic, 1 teaspoon Dijon mustard and the
zest of one lemon. Whisk in 1 tablespoon of olive oil,
and lemon juice to taste. Add 1 tablespoon each of
chopped fresh dill and basil. Season with salt and pepper
if necessary and adjust the lemon to taste. This cold
sauce can be kept in a sealed bottle for up to a week. It is
delicious with sautéed or grilled fish. Garnish with extra
herbs.

Creamy dill sauce for salmon
Salmon has a stronger flavour that can stand up
to a richer sauce, and this one is rich!
In a small pot, combine ¼ cup sour cream, 2 tablespoons
heavy cream, ¼ cup Dijon mustard and one or two
tablespoons honey (according to taste). Warm gently
while stirring. Add 3 tablespoons finely chopped dill
and slowly stir in the juice of one lemon, and add
2 tablespoons of capers. Keep stirring over a low heat
until all the ingredients are blended and warm. Spoon
the sauce over the salmon when serving.
