Chocolate Brownies
MAKES 1 (10-INCH) SQUARE PAN
Don’t worry, these brownies will
only make you think you’ve died
and gone to heaven.
3 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon kosher salt
1 cup unsalted butter, cubed
1 cup heavy whipping cream
½ cup unsweetened cocoa
powder
½ cup water
2 cups sugar
1 teaspoon vanilla extract
4 large eggs, room temperature
1 (11.5-ounce) bag semisweet
chocolate chunks
½ cup white chocolate chips
Garnish: dark chocolate shavings
- Preheat oven to 350°. Spray
a 10-inch square baking pan
with cooking spray. Line pan with
parchment paper, letting excess
extend over sides of pan. - In a large bowl, whisk together
flour, baking soda, and salt. In a
medium saucepan, melt butter over
medium heat. Whisk in cream, cocoa,
and ½ cup water. Bring to a boil over
medium heat, whisking constantly.
Remove from heat; stir in sugar and
vanilla. Transfer to a large bowl, and
let cool for 5 minutes. Whisk in eggs.
Add flour mixture to cocoa mixture,
whisking until combined. Reserve ¼
cup chocolate chunks; fold remaining
chocolate chunks into batter. Pour
batter into prepared pan; top with
reserved ¼ cup chocolate chunks.
- Bake until a wooden pick inserted
in center comes out with a few
moist crumbs, 25 to 30 minutes.
Let cool completely on a wire rack.
Using excess parchment as handles,
remove from pan. - In a microwave-safe bowl, melt
white chocolate chips on high
in 30-second intervals, stirring
between each, until melted and
smooth. Drizzle melted chocolate
over cooled brownie. Garnish with
chocolate shavings, if desired.
