4 Brush the outside of the rolled sirloin
of beef with olive oil and sprinkle
with salt. Transfer to a roasting dish
and roast in the preheated oven,
about 45 minutes for medium-rare.
Remove from oven and allow to rest
for 15 minutes before garnishing with
the extra herbs. Serve immediately.

SPICY SPINACH WITH
CHICKEN LIVERS
Serves 6 – 8 EASY 30 mins

WHAT YOU NEED
canola oil, to fry
1 tbsp salted butter
½ tsp ground nutmeg
½ tsp mustard powder
½ tsp dried chilli flakes

2 bunchesfreshspinach,washed
andshredded
500gchickenlivers,cleaned
saltandfreshlygroundblackpepper,
totaste
2 handfulsfreshflat-leafparsley,
roughlychopped

HOWTODOIT
1 Forthespinach,heatthecanola
oilandsaltedbutterinalarge
saucepanplacedovermediumheat
untilthebutterhasmelted.Addthe
groundnutmeg,mustardpowderand
driedchilliflakes.Fryuntilfragrant,
about 1 minute.Addtheshredded
spinachandsautéuntilwilted,about
10 minutes.
2 Whilethespinachissautéing,heat
aglugofcanolaoilinamedium
saucepanplacedoverhighheat.
Addthechickenliversandfryuntil
brownedandcookedthroughtothe
centre,about 3 minutesperside.
Transferthechickenliverstothe
spinachmixtureandmixuntil
combined.Seasontotaste.
3 Removefromheatandstirin
thechoppedfreshparsley.
Serveimmediately.
