F

ood has always been
a part of Anna’s
life, having been
born and bred on a
farm in eMkhondo
(Piet Retief) in
Mpumalanga. It was
here that she learned
the value of pure, unprocessed food.

Lovingly known to her friends and
peers as Caro, the 30-year-old farm
girl-turned-city slicker pursued her
passion and love for food by studying
to be a chef at Steyn’s Culinary School
in Hatfield, Pretoria. An advocate for
plant-based food and eating healthily,
Caro did her internship at the acclaimed
Le Quartier Français in Franschhoek,
Western Cape, before going back to
Mpumalanga to run a bistro.
After two successful years, Caro
moved to Cape Town to pursue a
career as a chef, food stylist and
writer. And now – with the publication
of Butter & Love and the airing of her
cooking show, Koskaskenades, on
SABC 2 – Caro has added cookbook
author and TV-show host to her CV!
Through her book, Caro invites you
into her family’s farm kitchen – a place
she describes as “magical and filled
with aromas, flavours and stories”.
Though written in English, Butter & Love
embraces Caro’s Afrikaans heritage,
with over 80 recipes passed on from
her great-grandmother, grandmother
and mother! Caro says her cookbook is
her way of passing the recipes down

to her future children. “I have lived in
Cape Town for the past 10 years and
my life looks significantly different
to what it used to look like in my
childhood and teenage years. I really
want my children to know and be
reminded of where we come from!”

LIENTJIE SE PAP-FRIKKADELLE
Lientjie’s pap balls
As you’ve probably gathered by
now, I ate a lot of mielies and mielie-
related foods growing up. Living in a
place where the roads are sometimes
literally paved with mielies, well, you
make it work for you. This dish
featured at nearly every community
get-together, and rolling the balls is
a jolly affair.

Serves 8–10

2 cups maize rice, soaked overnight
2 cups coarse maize meal
6 cups (1,5 litres) boiling water
2 tsp salt
1 x 410 g tin whole-kernel corn
¼ cup butter
