American Diabetes Association best-selling cookbooks and a
member of the Academy of Nutrition and Dietetics’ Dietitians
in Integrative and Functional Medicine Dietetic Practice Group,
and has served on the board of the Chicago Dietetic Associa-
tion and the University of Chicago Celiac Disease Center. Chef
Jennifer Bucko Lamplough is the director of nutrition programs
and executive chef for Northern Illinois Food Bank in Geneva,
Illinois. In this position, she oversees all the nutrition and meal
programs for children, seniors, Supplemental Nutrition Assis-
tance Program outreach, nutrition education, and healthy
communities. She too has coauthored three other American
Diabetes Association cookbooks.
The Diabetes Cookbook is designed to make healthful eating
easy, realistic, and delicious, offering 300 recipes and meals
tested by people living with diabetes and their families. The
book includes quick recipes such as Healthy Mexican Slid-
ers, foodie recipes such as Chicken Satay and Pineapple Peach
Sorbet, budget-friendly recipes such as Chicken Sausage and
Cabbage Skillet and Pork Chops with Peach Salsa, slow cooker
recipes such as Slow Cooker Beef Stew and Slow Cooker Flank
Steak Tacos, and kid-friendly recipes such as Rainbow Fruit
Platter and Raspberry Smoothie Pops.
Chapters of recipes are dedicated to gluten-free, grain-
free, dairy-free, vegetarian and flexitarian, and Mediterranean
eating. Each recipe provides easy-to-find ingredients, simple
instructions, and nutrition facts. Recipes also include tips from
a dietitian or chef and recommendations to modify the dish (eg,
make it gluten-free). Overall, there’s a wide variety of recipes
to choose from and the tips for modification make them even
more versatile for individual preferences. The Diabetes Cook-
book would make a great addition to any healthful eating cook-
book collection.

The Mindful Eating
Workbook is beauti-
fully laid out with calming colors and simple, delicate illustra-
tions. Tsui does a lovely job of walking the reader through what
mindful eating is and what it isn’t. For example, she discusses
how mindful eating isn’t simply slowing down at mealtime,
but rather slowing down to use the senses to experience each
moment—taste, smell, sight, etc.
The workbook is filled with useful and thoughtful exercises,
such as a Mindful Eating Assessment in chapter one, which
aims to deduce one’s levels of awareness, judgment, and
recognition of hunger and fullness.
Chapter two is all about embodiment, the represen-
tation or expression of a quality or idea in physical form,
which can be realized by building interoceptive awareness.
Interoceptive awareness is necessary to sense hunger and
fullness, which may be felt in areas beyond just the stom-
ach. There’s a practical worksheet for readers to document
where in the body they feel hunger, which can be a useful
step toward mindfulness.
The remaining three chapters detail how our brain influ-
ences our eating habits, a mindful meal exercise, how to use
nonjudgmental language, setting boundaries, and more.
This workbook would be a lovely and useful addition to any
dietitian’s practice. There are blank worksheets in the back
of the book, which can be photocopied and used in and out of
sessions. I highly recommend adding this resource to your
shelf and using the strategies discussed with clients.
