Asimpleanddeliciouswaytoeat
thesetomatoes,whilestillwarm,
is ona sliceoftoastedsourbread
spread with goat’s cheese

SERVES 4
10 mediumtomatoes
3 garliccloves,crushed
3 bigpinchesofseasaltflakes
2 pinchesoffreshly ground
blackpepper
20 basilleaves
1-2tbspbreadcrumbs
3-4 tbsp olive oil

■Preheattheovento220 ̊C/Fan
200 ̊C/Gas7 andslicethetomatoes
inhalfalongtheirequator.Placethe
halves,cut-sideup,ona bakingtray.
Distributethegarlicbetweenthe
tomatoes,tucking it in so it doesn’t sit
onthesurface.
■Sprinkleoverplentyofsaltandblack
pepper,followedbythebasilleavesand
breadcrumbs.Finishwitha generous
drizzleofoliveoil,thenbakeinthe
ovenfor30-35minutes,untilthe
tomatoes are oozing and beautiful.→
