800gfreshwholeguttedsardines
Zestandjuiceof1 lemon
2 tbsp olive oil (if cooking indoors)

■Tobarbecue:lightthebarbecueand
onceit’sready,placethesardinesin
a fishgrillbasketsothattheycanbe
turnedeasily.Cookfor2 minutes
ononeside,then1 minuteonthe
other.Placethesardinesona serving
platter,grateoversomelemonzest
andsqueezeovera little lemon juice.
Serveimmediately.
■Tocookindoors:preheatthegrill
tohigh.Laythesardinesona raised
grillrackona bakingtray.Grateover
somelemonzestanddrizzleoverthe
oliveoil.Placeunderthegrillfora
fewminutes.Turnonce,thencookfor
a finalminute.Placethesardinesona
servingplatter,grateoversomelemon
zestandsqueezeovera littlelemon
juice and serve immediately.
