Killer Su-doku is based on the traditional
grid and every column, every row and
every 3x3 box must contain the digits 1 to 9.
But the dotted squares must be filled
with numbers that add up to that in the
left corner.

METHOD
Whisk together the olive oil, pesto sauce, lemon
rind and juice. Divide between two bowls. Add the
raw prawns to one BOWL and the COURGETTES
and fennel wedges to the other. Season both with
salt and FRESHLY ground BLACK pepper and stir
WELL, so the prawns and vegetables are coated by
the marinade. COVER and LEAVE to STAND for up
to HALF an HOUR at cool ROOM TEMPERATURE.
SOAK 12 WOODEN skewers in cold water, then THREAD the prawns and courgettes onto them. PREHEAT a
GRIDDLE pan until smoking hot. Take the fennel from the MARINADE and arrange in the pan. Cook for 2 or 3
minutes EACH side until tender and pleasantly charred. Keep WARM. Arrange skewers on the griddle pan.
Cook for 4 to 5 MINUTES, turning ONCE, until the courgettes are TENDER and the prawns have turned pink.
Mix together the salsa and AVO C A D O then spoon into a bowl. ARRANGE skewers on a platter with the fennel.
Serve with SALSA dip, LEMON wedges and CRUSTY BREAD. Serves 4.
