(^1) Heat oven to 450°F.
Pat meat dry and season
with ¼ tsp each salt and
pepper.
(^2) Heat a large skillet
on medium-high.
(^3) Add 1 Tbsp olive oil
to the hot skillet and
swirl it to evenly coat
the bottom of the pan.
Add meat and sear until
the bottom is nicely
browned, 2 to 3 minutes.
(^4) Carefully flip each
piece of meat and cook
1 minute more.
(^5) Transfer the skillet to the
oven and roast to desired
doneness (see suggested
cooking times at right).
(^6) Transfer to a cutting
board and let rest a
few minutes to help
the meat stay juicy.
Shrimp
Pat 1 lb peeled, deveined
shrimp dry and season
with ¼ tsp each salt and
pepper. Heat a large skillet
on medium-high. Add
1 Tbsp olive oil to the hot
skillet and swirl it to evenly
coat the bottom of the
pan. Add shrimp and
cook until opaque
throughout, 2
to 3 minutes
per side.
