1 cup creamy peanut butter
¾ cup packed light brown sugar
1large egg
¾tsp baking soda
½ cup peanuts, finely chopped
½ cup Concord grape jam

(^1) Heat oven to 350°F. Line 2 to 3
large baking sheets with parchment
paper. In a large bowl, using an
electric mixer, beat peanut butter,
brown sugar, egg, and baking soda
until fully incorporated.
(^2) Roll dough into ¾-in. balls (about
a level teaspoon each) and coat half
the balls with chopped nuts.
(^3) Transfer balls to the prepared
baking sheets, spacing them 2 in.
apart. Bake until cookies are puffed
and starting to lightly brown around
the edges, 8 to 10 minutes. Let
cool on the sheets for 5 minutes,
then transfer to a wire rack to
cool completely. Repeat with any
remaining balls if necessary.
(^4) Spread ½ tsp jam on each
plain cookie and sandwich with a
nut-coated cookie.

¾ cup distilled white vinegar
½cup water
1 Tbsp kosher salt
1Tbsp sugar
1½ tsp mustard seeds
1½ tsp coriander seeds
1 clove garlic, thinly sliced
In a small pot, combine all ingredients
and bring to a boil. Lower heat and
gently simmer for 5 minutes, then
pour while still hot over your choice of
veggies and seasonings (combinations
below). Let cool for at least 10 minutes,
then refrigerate for up to 2 weeks.
