POP YOUR CORK
Such is the popularity of
prosecco that it’s now been
given its own day. Tuesday,
August 13 is National
Prosecco Day, which is an
excellent excuse to pop open
a bottle of the delicious
Italian fizz. We love Terra
Organica Prosecco (Ocado,
£13.99), made using organic
grapes planted on the hills
around Treviso in northern
Italy. Pale lemon in colour
with soft bubbles, it’s light,
dry and fruity. Or why not try
talk-show host and winemaker

winning extra-dry GN

supermarket.com). It’s a
moreish bubbly with aromas
of white flowers, a hint of
citrus and a satisfyingly crisp

● Heat a frying pan and toast the cumin,
coriander and fennel seeds for a minute
or so, until fragrant.
● Lightly crush using a pestle and
mortar, then put into a large bowl along
with the lamb mince, garlic, sea salt
and the remaining spices. Leave to
stand for at least an hour to allow the
flavours to develop.
● Before cooking, break off a small
piece, fry and taste to check the
seasoning. Adjust if necessary. Shape
the mince into 6 patties, each weighing
about 100g. Using a pastry brush, lightly
coat the outside of each kofta with oil.
● Place the koftas on a hot barbecue
and cook for 4-5 minutes on each side,
until nicely charred and hot all the way
through. Leave to rest for a few minutes
before serving.
