2 Whisk together the eggs and sugar into
a thick mousse-like mixture, then fold
through the melted chocolate mix.
3 Add the flour and cocoa powder, then
fold through again.
4 Mix in the chocolate chips carefully,
then pour over the Oreo layer.
5 Bake the brownies in the oven for
25-30 minutes, or until baked through.
Sometimes it can take a smidge longer!
6 Leave to cool in the tin for 10 minutes,
then carefully remove and finish cooling
on a wire rack. Cut into squares
and enjoy!
Peanut butter

For the brownies
350g (12oz) dark chocolate
200g (7oz) unsalted butter
3 large free-range eggs
50g (1¾oz) self-raising flour
250g (9oz) unrefined dark
muscovado sugar (we used
Billington’s)
For the filling
170g (6oz) peanut butter
(we used Proper Nutty)
110g (4oz) icing sugar
(we used Silver Spoon)
½ tsp vanilla extract
(we used Nielsen Massey)
25ml (1fl oz) milk
For the topping
60g (2oz) peanut butter
(we used Proper Nutty)
1 Preheat the oven to 190ºC/Gas
Mark 5. To make the cake mix,
melt the chocolate and butter
together in a large bowl over a pan
of simmering water. Once melted,
allow the mixture to cool slightly.
2 In a separate bowl, whisk together the
eggs and sugar until there are no lumps.
Mix in the chocolate mixture, then the
flour, until you have a smooth batter. Set
aside while you make the filling.
3 Mix the peanut butter, icing sugar,
vanilla and milk together until you have a
stiff mixture. Roll out between two
pieces of baking parchment until it is
about 20cm (8in) square.
4 Pour half the cake bat ter into a 20 cm
(8in) cake tin, then lay the peanut
mixture on top; it doesn’t matter if it
breaks, just patch it together, then cover
with the remaining batter.
5 Finally, dot with the peanut butter,
then swirl it with a round-tipped knife,
taking care not to go as deep as the
peanut butter layer beneath. Bake in the
oven for 30 minutes. Allow to cool
completely in the tin before cutting.
