LED^ FLANK^ STEAK
1 (1½- to 2-pound) fl ank steak
¼ cup olive oil
2 tablespoons Classic Cajun
Seasoning (recipe follows)
ONE In a 1-gallon resealable plastic
bag, combine steak, olive oil, and
Classic Cajun Seasoning. Toss to coat.
Refrigerate for 8 to 24 hours.
TWO Preheat grill to high heat
(400° to 450°).
THREE Grill steak for 3 to 4 minutes
per side for medium rare, or until
desired degree of doneness.
Classic Cajun Seasoning
YIELDS ABOUT 2⁄3 CUP
2 tablespoons salt
2 tablespoons garlic powder
2 tablespoons onion powder
4 teaspoons Hungarian paprika
2 teaspoons ground oregano
2 teaspoons ground thyme
2 teaspoons ground black
pepper
1 teaspoon ground cumin
½ teaspoon dry ground mustard
½ teaspoon ground celery seed
½ teaspoon ground chipotle
chile pepper
ONE In a small bowl, combine all
ingredients. Transfer to a sealed
container, and store for up to
6 months.
