- 125g/4½ozdigestivebiscuits
- 125g/4½ozgingernutbiscuits
- 90g/3¾ozunsaltedbutter
- 550g/1lb3ozcreamcheese
- 125g/4½ozcastersugar
- 2 tsplemonjuice
- Seedsfrom1 vanillapod
- 200g/7ozcrèmefraîcheor
souredcream - 100g/4ozthickGreekyoghurt
- 3 large free-range eggs
Fortheblueberrytopping
- 2 smallpunnetsof blueberries
- 2 tspcornflour
1 .Crushthebiscuitstoa powderin
a foodprocessor.Tipintoa bowl.
2 .Meltthebutterthenpourover
thebiscuitpowder.Stirtocombine.
Pressthemixintothebaseof a deep
20cm/8inspringformorloose-
bottomedcaketin,thenplacein
thefridgeforabout1 hourtoset.
3 .Preheattheovento170°C,
325°F,Gas3.
4. In a bowl, beat together the
creamcheese,sugar,lemonjuice
andvanillaseedsuntilcreamy.Mix
inthecrèmefraîche andyoghurt.
Addtheeggsandbeatuntilsmooth.
5 .Spoonthemixoverthechilled
biscuitbase.Smoothoverthetop
andbakeinthepreheatedovenfor
45 minutes,untilthefillinghasset
(itmayneedanother 10 minutes).
Transferthetintoa wirerackand
allowtocoolcompletely.
6 .Meanwhile,tosstheblueberries
inthecornflourthenputthemin
a smallpanwith3 tbspofwater.
Heat while stirring until the
blueberriesarebubblingandstart
tobreakup.Leavetocool.
7 .Runa smallparingknifearound
theinsideofthecheesecaketinto
helpreleasethecooled
cheesecake.Transfertoa serving
plateandspoonthecooled
blueberriesoverthetop.
TIPInsteadof blueberries,youcan
alsousecherriesor cranberries.For
thecherryversion,add1tspof
