CHICKEN
4 chickenbreastfillets,
cubed
5ml(1t)salt
5ml(1t)whitepepper
125ml(½c)cornflour
oilforshallow-frying
SAUCE
60ml(¼c)honey
30ml(2T)soysauce
1 garlicclove,chopped
5cmfreshginger,grated
1 chilli,chopped
TOSERVE
30ml(2T)sesameseeds,
toasted
extrasoysauce(optional)

1 Heathalftheoilina
largepanandstir-fry
theeggs.Removeand
setaside.
2 Heattherestoftheoil
inthesamepanand
stir-frytheonionuntil
soft.Addthespring
onionsandcarrotsand
stir-fryfora minute.
3 Addthepeas,cornand
riceandstir-fryuntil
warm.Lightlymixthe
eggandcoriander
throughthericeand
setaside.
4 ChickenSeasonthe
chickenwiththesalt
andpepper.Sprinkle
thecornflouroverand
shakeoffanyexcess.
5 Heattheoilina panand
frythechickeninbatch-
esuntilcrispy.Drainon
papertowels.
6 SaucePutalltheingre-
dientsina saucepan
andbringtotheboil.
Turntheheatdownand
simmeruntilslightly
thickened.Pourthe
sauceoverthechicken.
7 ToserveTransferthe
ricetoa servingdish
andarrangethechicken
ontop.Sprinklethe
sesame seeds over and
serve with extra soy
sauce (if using).
