Comfort Foods
- In a saucepan, cook crab apples and
sugar over low heat until fruit begins to
soften, about 7 to 10 minutes. Remove
pan from heat, and stir in cinnamon
and thickener. - Pour filling into crust-lined pie plate.
Dot with butter. Cover with remaining
crust, and seal edges. - Cut a couple of slits in top crust to
allow steam to escape. - Bake for 15 minutes. Reduce
temperature to 350 F, and bake for an
additional 35 to 40 minutes. - Remove pie from oven and let cool
for 10 to 15 minutes before slicing, to
allow filling to set up.
CRAB APPLE MUFFINS
Yields 12 servings.
(^1) ⁄ 3 cup butter, softened
(^1) ⁄ 3 cup granulated sugar
(^1) ⁄ 3 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
(^1) ⁄ 2 teaspoon baking powder
(^1) ⁄ 4 teaspoon baking soda
(^3) ⁄ 4 teaspoon cinnamon
(^1) ⁄ 4 teaspoon cloves
(^1) ⁄ 4 teaspoon salt
(^3) ⁄ 4 cup all-purpose flour
(^1) ⁄ 4 cup plus 2 tablespoons
whole-wheat flour
2 to 3 tablespoons milk, optional
1 cup chopped crab apples
(^1) ⁄ 2 cup chopped nuts
- Preheat oven to 325 F. Place paper
liners in muffin pan; set aside. - In a medium-sized bowl, cream but-
ter and sugars with an electric mixer
until fluffy. Add egg, and beat well. Stir
in vanilla. - In a separate bowl, whisk together
baking powder, baking soda, cinnamon,
cloves, salt, and flours. - Add dry ingredients to creamed mix-
ture, and mix to combine. If mixture is
too dry, add milk as needed. Gently stir
in fruit and nuts. - Fill muffin tins^2 ⁄ 3 full. Bake for
about 30 minutes.
CRAB APPLE BREAD PUDDING
Yields 6 to 8 servings.
8 slices cinnamon-raisin bread,
cut into cubes
4 eggs
(^1) ⁄ 3 cup maple syrup
3 tablespoons brown sugar
11 ⁄ 2 cups half-and-half
(^1) ⁄ 2 cup milk
1 teaspoon vanilla extract
(^1) ⁄ 4 teaspoon cinnamon
2 tablespoons butter
2 cups cored and chopped crab apples
2 tablespoons granulated sugar
- Spray a 2-quart casserole dish with
nonstick cooking spray. Sprinkle bread
cubes in dish.
- In a medium-sized bowl, whip eggs.
Add syrup, brown sugar, half-and-half,
milk, vanilla, and cinnamon, and mix
well. Pour over bread in baking dish.
Cover with plastic wrap and refrigerate
for at least 4 hours. - Preheat oven to 400 F.
- In a saucepan over medium-low
heat, combine butter, crab apples, and
granulated sugar. Cook for 7 to 10 min-
utes, or until fruit is slightly tender. - Pour fruit mixture over ingredients in
baking dish. - Bake, uncovered, for 45 to 60 min-
utes, or until set.
