  1. In a saucepan, cook crab apples and
    sugar over low heat until fruit begins to
    soften, about 7 to 10 minutes. Remove
    pan from heat, and stir in cinnamon
    and thickener.

  2. Pour filling into crust-lined pie plate.
    Dot with butter. Cover with remaining
    crust, and seal edges.

  3. Cut a couple of slits in top crust to
    allow steam to escape.

  4. Bake for 15 minutes. Reduce
    temperature to 350 F, and bake for an
    additional 35 to 40 minutes.

  5. Remove pie from oven and let cool
    for 10 to 15 minutes before slicing, to
    allow filling to set up.


CRAB APPLE MUFFINS
Yields 12 servings.

(^1) ⁄ 3 cup butter, softened
(^1) ⁄ 3 cup granulated sugar
(^1) ⁄ 3 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
(^1) ⁄ 2 teaspoon baking powder
(^1) ⁄ 4 teaspoon baking soda
(^3) ⁄ 4 teaspoon cinnamon
(^1) ⁄ 4 teaspoon cloves
(^1) ⁄ 4 teaspoon salt
(^3) ⁄ 4 cup all-purpose flour
(^1) ⁄ 4 cup plus 2 tablespoons
whole-wheat flour
2 to 3 tablespoons milk, optional
1 cup chopped crab apples
(^1) ⁄ 2 cup chopped nuts



  1. Preheat oven to 325 F. Place paper
    liners in muffin pan; set aside.

  2. In a medium-sized bowl, cream but-
    ter and sugars with an electric mixer
    until fluffy. Add egg, and beat well. Stir
    in vanilla.

  3. In a separate bowl, whisk together
    baking powder, baking soda, cinnamon,
    cloves, salt, and flours.

  4. Add dry ingredients to creamed mix-
    ture, and mix to combine. If mixture is
    too dry, add milk as needed. Gently stir
    in fruit and nuts.

  5. Fill muffin tins^2 ⁄ 3 full. Bake for
    about 30 minutes.


CRAB APPLE BREAD PUDDING
Yields 6 to 8 servings.

8 slices cinnamon-raisin bread,
cut into cubes
4 eggs

(^1) ⁄ 3 cup maple syrup
3 tablespoons brown sugar
11 ⁄ 2 cups half-and-half
(^1) ⁄ 2 cup milk
1 teaspoon vanilla extract
(^1) ⁄ 4 teaspoon cinnamon
2 tablespoons butter
2 cups cored and chopped crab apples
2 tablespoons granulated sugar



  1. Spray a 2-quart casserole dish with


nonstick cooking spray. Sprinkle bread
cubes in dish.


  1. In a medium-sized bowl, whip eggs.
    Add syrup, brown sugar, half-and-half,
    milk, vanilla, and cinnamon, and mix
    well. Pour over bread in baking dish.
    Cover with plastic wrap and refrigerate
    for at least 4 hours.

  2. Preheat oven to 400 F.

  3. In a saucepan over medium-low
    heat, combine butter, crab apples, and
    granulated sugar. Cook for 7 to 10 min-
    utes, or until fruit is slightly tender.

  4. Pour fruit mixture over ingredients in
    baking dish.

  5. Bake, uncovered, for 45 to 60 min-
    utes, or until set.
