SERVES 4

2 tbspoliveoil
2 clovesgarlic,sliced
200gMeadowshiitakes,sliced
4 small/mediumwaxypotatoes
4 mediumpizzabases
250gmozzarella,grated
24 pittedgreenolives
2 tbspfreshoreganoleaves
Extravirginoliveoilfordrizzling
ROCKETSALSAVERDE
1 clovegarlic,sliced
1 tbspcapers
3 anchovyfillets
1 cuprocket,finelychopped
2 tbspparsley,finelychopped
1 tbsplemonjuice
4 tbspoliveoil

1 Heattheovento 240 °C
(orashotasyoucan).
2 Heattheoilina fryingpan
toa mediumheatandsauté

thegarlic and shiitakes for
5 minutes with a sprinkle
ofsalt. Set aside.
3 Bring the potatoes to the boil
ina saucepan of water, then drain
immediately. Slice very thinly.
4 Arrange the potato slices over
thepizza bases and scatter over
themozzarella, cooked shiitake
mushrooms, green olives and
oregano leaves. Drizzle with extra
virginolive oil and bake for 6-8
minutes until crisp and bubbling.
Serveimmediately, drizzled with
rocketsalsa verde.
5 Forthe rocket salsa verde,
combine the garlic, capers and
anchovies in the small bowl of a
foodprocessor or mortar and pestle,
andprocess or pound until blended.
Addthe rocket, parsley, lemon juice
andolive oil, and combine until
youhave a coarse sauce. Season
withsalt and pepper.
