FOR THE BASE
500ml self-raising flour
125ml castor sugar
pinch salt
125g butter, cubed
3 egg yolks
30ml ice water

FOR THE TOPPING
375ml smooth apricot jam
3 egg whites
125ml castor sugar
625ml desiccated coconut

1 Preheat oven to 160°C. Grease a 23cm x 30cm
pan. For the base, sift together the flour, sugar
and salt. Rub in the butter until it resembles
breadcrumbs. Beat together the egg yolks
and water and cut into the flour mixture until
a dough forms. Press the dough into the
prepared pan.
2 For the topping, spread the jam over the dough.
Beat the egg whites until soft peaks form.
Slowly add the sugar, beating until a stiff, shiny
meringue forms. Fold the coconut through and
spoon over the jam. Bake for about 50 minutes,
until golden. Cut into blocks and leave to cool
completely before removing from the pan.
