Makes 1 loaf Takes 55 mins + cooling
410g tin cream-style sweetcorn
2 eggs, beaten
5ml salt
60ml warm milk
50g butter, melted + extra
3ml paprika
580ml self-raising flour
handful chives, chopped (optional)
250ml Cheddar, grated (optional)
1 Preheat oven to 180°C. Grease
a 12cm x 22cm bread tin. Combine
all the ingredients and pour into
the prepared tin. Bake for about
45 minutes, until golden and cooked.
2 Brush the top with extra melted
butter as soon as it comes out of
the oven. Cool for at least 20 minutes
in the tin before turning out.
