paprika and
cheesepotatoes

1kg baby potatoes
2 tots olive oil
2 tots butter
1 onion, chopped
1 bell pepper (green, yellow
or red), seeded and sliced
into strips
8 garlic cloves, crushed
1 tsp salt
1 tsppepper
300gCheddar
cheese,grated
½totpaprika


Washthepotatoes,add
themtoyourpotjieandboil
inwateruntilsoft.
Drainthewaterfromthe
potjie,butleavethesoft-
boiledpotatoesinsideit.Add
theoliveoil,butter,chopped
onion,bellpepperstrips,
garlic,saltandpeppertothe
potjieandstir-fryeverything
forafewminutes,untilsome
thingsbecomecaramelised
andgoldenbrown.
Useawoodenspoonor
braaitongstopresssome
ofthepotatoessothatthey
burstattheseams,allowing
extraflavourstodevelopand
penetratethem.Stir-fryfor
anotherminuteorthree.
Ifthingsatthebottomofthe
potjiegetstickyandatrisk
ofburning,addabitof
water,oliveoil,beer,wine
orstockandscrapeloose
anythingsticky.
Nowaddthegratedcheese
andsprinklepaprikaontop
ofit.Closethelidofthe
potjieandtakeitoffthefire.
Placeagenerousamountof
coalsonthelidofthepotjie



  • asmanyasyoucanfit–
    andwaitafewminutesfor
    thecheesetostartmelting.
    Oncethecheesehasmelted,
    yourpotatoesaregood
    togo!

This is obviously great: potatoes cooked soft in
a potjie and then cast-iron potjie-fried in olive oil
and butter. Add to that star players like paprika –
the fresh version (also known as sweet bell pepper
paprika – the dried, ground version) and cheese –
and it’s what winning feels and tastes like!
