FOR BREAD

240g cake flour

pinch of salt

10ml baking powder

5ml bicarbonate of soda

125ml butter, at room temperature

100g sugar

125ml Cappy® Sparkling Mango

Orange Juice

3 large eggs

5ml ground cinnamon

5ml vanilla extract

50g tin mango slices, drained

and chopped

FOR FRENCH TOAST

4 large eggs

160ml milk

80ml cake flour

100g sugar

10ml vanilla extract

15ml ground cinnamon

butter (optional), to serve

crispy bacon, to serve

honey, to serve

1 Preheat the oven to 180°C and

lightly grease a loaf pan.

2 To make the bread, combine the flour,

salt, baking powder and bicarbonate

of soda in a large bowl and set aside.

3 Cream together the butter and

sugar. Gradually add Cappy®

Sparkling Mango Orange Juice

and the eggs, one by one, beating

well after each addition. Mix in the

cinnamon, vanilla and mango.

4 Pour the mixture into the prepared

loaf pan and bake until a toothpick

inserted in the centre comes out

clean (about 30-40 minutes).

Transfer the loaf pan onto a cooking

rack and let it cool before slicing.

5 For the French toast, mix the

eggs, milk, flour, sugar, vanilla and

cinnamon in a shallow bowl and

whisk well together. Heat a frying

pan to medium/high. Add a slice at a

time to the milk mixture and soak for

a few seconds on each side. Place the
