CREAMY MAC ’N CHEESE
WITH CRISPY BACON
Shoulder bacon, macaroni, Cheddar and
fresh flat-leaf parsley
Serves 4EASY50 mins

In a large frying pan placed over high heat,
fry200g diced shoulder baconuntil cooked.
Remove from heat and set aside. Cook 500g
macaroniaccording to packaging instructions.
Drain and drizzle with a glug of olive oil. Toss
to coat well. Set aside. In a medium pot, melt
100g salted butterover medium heat. Add
100g cake flour, whisking continuously to make
a roux. Remove from heat and add 750ml
(3 cups) full-cream milk, whisking constantly
until smooth. Return to heat and stir in ½ tsp
cayenne pepperand1tspmustard powder.
Cookovermediumheatuntilthesauce has
thickened,about3–5minutes.Add 150g
Cheddar,stirringuntilthecheese has melted.
Remove from heat and add the macaroni. Mix
until well combined. Transfer to a serving dish
and top with the fried bacon, extra Cheddar
andchopped fresh flat-leaf parsley.

CHEAT’S PIZZAS
Store-bought naan bread, tomato passata,
mozzarella and fresh basil
Serves 4EASY20 mins

Preheat the oven to 220°C. Place 4 store-
bought naan breadsin a lined baking tray.
Divide120ml tomato passatabetween the
naan breads, spreading an even layer over
eachofthem.Seasontotastewith salt and
freshly ground black pepper. Sprinkle each
naan with½tspdriedoreganoand top them
with25g grated mozzarellaeach. Bake the
pizzas in the preheated oven until the cheese
has melted and starts to bubble and brown,
about 5 minutes. Remove from oven and set
asidetocoolslightly.Topeachpizza with a
few fresh basil leaves. Serve immediately.
