1 tablespoontomatopaste
2 garliccloves,crushed
1kgchickenwingnibbles
CreamyChiveMayonnaise
¼cupwhole-eggmayonnaise
2 tablespoonssourcream
1 teaspoonDijonmustard
1 tablespoonfinelychopped fresh chives

1 CombineGuinness,sugar,barbecue
sauce,vinegar,tomatopasteandgarlic
ina saucepanovermedium-highheat.
Cook,stirring,for2 minutesoruntilsugar
dissolves.Bringmixturetotheboil.Boil
for5 minutesoruntilthickenedslightly.
Removefromheat.Coolcompletely.
2 CombineGuinnessmixtureandchicken
wingsina largeglassorceramicbowl.
Cover.Refrigeratefor 4 hours or overnight,
if timepermits.
3 Preheatovento220°C/200°Cfan-forced.
Linea largebakingtraywithbakingpaper.
Drainwings,reservingmarinade.Arrange
drainedwingsonpreparedtray.Place
reservedmarinadeina smallsaucepan
over medium-high heat. Bring to the boil.

Boilfor5 to7 minutesoruntil marinade
hasthickenedslightly.
4 Bakewings,bastingtwicewithsome
ofthemarinade,for 45 minutesor until
goldenandcookedthrough.
5 Meanwhile,makeCreamyChive
MayonnaiseCombinemayonnaise,sour
cream,mustardandchivesina small
servingbowl.Seasonwithsaltandpepper.
6 ReheatremainingGuinnessmixture
overmedium-highheatuntilsimmering.
Placewingsona servingtray.Drizzle
withwarmGuinnessmixture.Serve with
creamychivemayonnaise.
