WITHSOBA NOODLES

4 greenonions
500gchickenmince
¾ cuppankobreadcrumbs
1 egg,lightlybeaten
1 garlicclove,crushed
2cmpiecefreshginger, peeled,
finelygrated
2 teaspoonssesame seeds, toasted
¾ cupsoysauce
¹⁄³cupmirinseasoning
¹⁄³cupcastersugar
3 teaspoonssesameoil
2 tablespoonsvegetableoil
180gdriedsobanoodles
150g snow peas, trimmed, thinly sliced


1 bunchasparagus,trimmed,halved
lengthways, cut into thirds
2 lemons
25g snow pea sprouts, trimmed

1 Finelychophalftheonions.Combine
mince,breadcrumbs,egg,garlic,ginger,
1½teaspoonssesameseedsandchopped
onionina bowl.Rollleveltablespoons
ofmixtureintoballs.Placeona plate.
Refrigeratefor 15 minutes.
2 Placesoysauce,mirinseasoning,sugar
andsesameoilina bowl.Stiruntilsugar
dissolves.Reserve2 tablespoonsofmixture.
3 Heatvegetableoilina large,deepfrying
panovermedium-highheat.Cookmeatballs,
in2 batches,turning,for5 minutesoruntil
browned.Transfertoa plate.Addsoy
mixturetopan.Bringtotheboil.Reduce
heattomedium-low.Simmerfor3 minutes
or until thickened slightly. Add meatballs.

Simmer,tossingmeatballsinsoymixture,
fora further5 minutesoruntilcooked
throughandcoatedinstickysoymixture.
4 Meanwhile,cooknoodlesina saucepan
ofboilingwaterfollowingpacketdirections,
addingsnowpeasandasparagusduring
last2 minutesofcookingtime.Drain.
Transfertoa heatproofbowl.Juicehalf
a lemon(you’llneed1 tablespoon).Add
juiceandreservedsoymixture to noodle
mixture.Tosstocombine.
5 Thinlysliceremaininggreenonions.
Addtonoodlemixture.Tosstocombine.
Dividenoodlemixtureamongbowls.
Topwithmeatballsandsprouts.Cut
remaininglemonintowedges.Sprinkle
meatballswithremainingsesame seeds.
Servewithlemonwedges.
